Chicken pasta sauce:

Ingredients:

2 pounds ground chicken
2 tablespoons olive oil
2 onions, chopped
6 garlic cloves, chopped
2 tablespoons tomato paste
2 carrots, grated
2 cups diced tomatoes
1/4 cup dry white wine
1 cup chicken stock
Salt and pepper to taste 1 bay leaf

Directions:

1. Heat the pressure cooker on the Browning option. Add the oil and ground chicken and cook for 5 minutes then stir in the rest of the ingredients.

2. Season with salt and pepper and cook on high pressure for 12 minutes.

3. When done, allow to cool down for 10 minutes then carefully release the pressure.

4. Serve the sauce warm over al dente cooked pasta of your choice.

Ingredients:

2 chicken breasts, cubed
2 tablespoons olive oil
1 red bell peppers, cored and diced
1 zucchini, cubed

2 celery stalks, sliced
2 tomatoes, peeled and diced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon paprika
2 potatoes, peeled and cubed
2 cups baby spinach

Directions:

1 combine the chicken and olive oil in your pressure cooker. Select the Browning option and cook for 5 minutes.

2 Add the rest of the ingredients and season with salt and pepper to taste.

3 Cook on high pressure for 15 minutes.

4 When done, allow the pot to cool down for 10 minutes.
