TOMATO SPINACH QUICHE

Ingredients:

12 large eggs
1/2 cup milk
1/2 tsp. salt
1/4 tsp. ground pepper
3 cups fresh baby spinach, roughly chopped
1 cup diced tomatoes, chopped
3 large green onions, sliced
4 tomato slices, topping the quiche
¼ cup shredded parmesan cheese

Directions:

1) In a large mixing bowl, whisk eggs, milk, salt, pepper
2) Add onions, tomatoes, chopped spinach leaves in a baking quiche mould. Pour the egg mixture from the top.
3) Garnish with tomato slices and grated parmesan cheese.
4)In a cooker pot, add 1 ½ cup water and place the rack. Place the quiche mould on the rack or the metal trivet.
5) Lock the cooker lid and cook on high pressure for 20 minutes. leave it aside for 10 minutes.
6) Do a pressure release and remove the quiche and serve hot.

CAPSICUM SPINACH QUICHE  

 Ingredients:

12 large eggs
1/2 cup milk
1/2 tsp.salt
1/4 tsp.ground pepper
3 cups fresh baby spinach, roughly chopped
1 cup diced capsicum, chopped
3 large green onions, sliced
4 capsicum slices, topping the quiche
1/4 cup shredded parmesan cheese

Directions:

1)In a large mixing bowl, whisk eggs, milk, salt, pepper.
2)Add onions, capsicum, chopped spinach leaves in a baking quiche mould. Pour the egg mixture from the top.
3)Garnish with capsicum slices and grated parmesan cheese.
4)In a cooker pot, add 1 1/2 cup water and place the rack.Place the quiche mould on the rack or the metal trivet.
5)Lock the cooker lid and cook on high pressure for 20 minutes.Leave it aside for 10 minutes.
6)Do a pressure release and remove the quiche and serve hot.

EGGPLANT SPINACH QUICHE

Ingredients:

1/4 cup shredded parmesan cheese

2)Add onions, tomatoes, chopped basil leaves in a baking quiche mould. Pour the egg mixture from the top
3) Garnish with tomato slices and grated parmesan cheese
