Pumpkin Pie

Ingredients:

Crust:

1 cup cinnamon cookies,crushed
1/4 cup butter,melted
1/4 cup ground pecans

Filling:

1 cup pumpkin pure
2 eggs
1/2 cup sweetened condensed milk
1 teaspoon pumpkin pie spice
2 tablespoons dark brown sugar
1 pinch salt

Directions:

1 For the crust, combine all the ingredients in a bowl and mix well. Transfer the mixture in a baking tray that fits the pressure cooker. Press the mixture well.
2 For the filling, combine all the ingredients in a bowl and mix well. pour over the crust.
3 pour 1 cup of water in your pressure cooker and place a metal trivet on top.
4 Place the banking tray on top and cook on high pressure for 12 minutes.
5 Serve the dessert chilled.

Vanilla Rice Pudding

Ingredients :

1 cup white rice
2 cups whole milk
1 vanilla bean, cut in half lengthwise

1/2 cup golden raisins

Directions :

1 combine the ingredients in your pressure cooker.
2 cook on high pressure for 10 minutes.
3 Allow the pot to cool down for a few minutes then release the pressure and serve the dessert chilled.

Ingredients:

1 can sweeten condensed milk
2 cups of water

Directions:

1 Make a small hole in the top of the condensed milk can and place it in your pressure cooker.
2 Pour in the water then seal the pot and cook on high pressure for 15 minutes
3 Allow the pot to cool down for 10 minutes then release the pressure and serve the dulce de leche chilled

Ingredients:

24 oz.cream cheese
1/2 cup light brown sugar
1/2 cup smooth peanut butter
1 teaspoon vanilla extract
2 eggs
1 egg yolk
1 tablespoon cornstarch
1/2 cup dark chocolate chips

Directions:

1 Grease a baking tray with butter and make sure the tray fits the pressure cooker.

4 Arrange the tray over the trivet and seal the pot with its lid.
