Mediterranean Salmon Stew

Ingredients:

3 salmon fillets, halved
2 tablespoons olive oil
1 shallot, sliced
2 garlic cloves, minced
4 red bell peppers, cored and sliced
2 tomatoes, peeled and sliced
1/2 teaspoon dried basil
1/2 cup chicken stock
Salt and pepper to taste

Directions:

1 Turn your pressure cooker on and select the Browning option. Add the shallot and garlic and cook for 2 minutes until softened.
2 Stir in the bell peppers, tomatoes, and basil, as well as stock. Season with salt and pepper
3 Place the salmon fillets on top and cook on high pressure for 5 minutes.
4 Release the pressure and serve the stew warm and fresh
