Cheesy Mexican Soup

Ingredients:

4 cups chicken stock
3 cups water
2 chicken breasts,cubed
1 cup diced tomatoes
2 poblano peppers,chopped
1/2 teaspoon cumin powder
1/4 teaspoon chili flakes
1 can black beans,drained
1 cup froen corn
2 cups baby spinach
1 tablespoon chopped cilantro
Salt and pepper to taste
1 cup grated cheddar cheese for serving

Directions:

1 Combine the stock water chicken breasts,tomatoes poblano peppers,cumin powder,chili flakes,beans,corn,spinach and cilantro in your pressure cooker.
2 Add salt and pepper to taste and cook on high pressure for 15 minutes.


3 when done,allow the pot to cool down for 10 minutes then release the pressure and top the soup with grated cheddar cheese.
4 Serve right away.

Directions:

1 combine the olive oil,onion,carrots,celery and the rest of the ingredients,except the pesto,in your pressure cooker
2 Add Salt and pepper to taste then seal the pot with its lid and cook on ligh pressure for 10 minutes.


3 When done,allow to cool down then release the pressure with great care.
4 Stir in the pesto sauce then serve soup warm and fresh.
